Pink Shrimp & Citrus Ceviche

Shrimp Ceviche

Bright and refreshing, this shrimp ceviche is the perfect dish for a hot summer day. The combination of tangy orange juice, spicy jalapeño, and crisp onion adds depth of flavor to the tender shrimp. Serve it as an appetizer at your next backyard party or enjoy it as a light and flavorful meal on its own.

Ingredients:

1 lb raw shrimp, no shells
1/4 cup Uncle Matt’s Organic Orange Juice
1/3 cup organic lime juice
1/4 cup organic lemon juice
2 organic oranges, peeled and diced
1/2 small organic red onion, diced
1 organic cucumber, sliced and diced
1 organic grapefruit, peeled and diced
1 organic jalapeno pepper, seeds and pith removed, fined diced
1/4 cup organic cilantro leaves, chopped
Salt, to taste

Garnish

Organic avocado (optional)

Instructions:

  1. Bring a pot of water to a boil. While you’re waiting for that, fill up a large bowl with ice and water and set aside.
  2. Place the shrimp in the boiling water and cook for one minute. Use a skimmer to remove the shrimp to the ice water bath. Once the shrimp have fully cooled, drain the water through a colander.
  3. Pour the lime juice, lemon juice and Uncle Matt’s Organic orange juice into a large bowl and add the shrimp. Give them a stir and place in the refrigerator for 20 minutes to marinate.
  4. Add the remaining ingredients to the bowl of shrimp and stir everything together. Garnish with avocado before serving.
