Red Cabbage Orange Salad
This colorful medley of crisp red cabbage, juicy orange slices, and a sprinkle of pomegranate arils is a delightful celebration of flavors and textures. Perfect for a refreshing lunch or a lively side dish, this salad is as nutritious as it is delicious.
Ingredients
½ small organic red cabbage
1/4 cup Uncle Matt’s Organic OJ
2 tablespoons organic olive oil
½ teaspoon organic dijon mustard
½ teaspoon maple syrup or honey
½ teaspoon sea salt
¼ teaspoon organic black pepper
1 large organic orange thinly sliced, peel removed
¼ organic pomegranate seeds
Instructions
Slice the cabbage finely and place it into a large bowl. Add the Uncle Matt’s orange juice, olive oil, mustard, maple syrup, salt, and pepper.
Use your hands to mix very thoroughly, for about a minute.
Add the orange slices and pomegranate arils and either serve immediately, or store in a sealed container in the refrigerator for up to five days.
