Zesty Orange Cranberry Sauce

Makes 4 cups
Ingredients:
- 3 cups organic cranberries, fresh or frozen
- 1 cup organic cranberry juice
- 1 piece organic orange peel
- 1 organic orange for zesting
- 1/2 cup Ultimate Defense
- 3 cinnamon sticks
- 1/4 tsp ground clove
- 1/4 tsp ground allspice
- 1/4 tsp turmeric
- 1/2 cup organic sugar
- pinch salt
Directions:
- In a medium saucepan on high heat, add everything except the orange peel and zest. Bring ingredients to a boil, then reduce to a simmer covered.
- While simmering, stir occasionally with a spatula ensuring the mixture doesn’t burn. Simmer for 30 minutes or until sauce thickens.
- Remove lid and add orange peel and season to taste. Add more sugar or spice if needed.
- Once sauce is thickened and most liquid has evaporated, remove orange peel and cinnamon sticks and remove the pot from heat.
- With a hand-held blender, puree sauce but keep some texture.
- Freshly grate in orange zest, stir and season to taste.
- Transfer sauce to jar and place in refrigerator to cool overnight. Enjoy!
