Uncle Matt’s Orange Cocoa Cookies

Makes 2 dozen cookies
Ingredients:
- 1 cup organic unsweetened cocoa powder
- 2 cups organic sugar
- ½ cup organic vegetable oil
- 4 organic eggs
- 2 tsp organic vanilla bean paste
- 2 cups organic all purpose flour
- 2 tsp baking powder
- ½ tsp salt
- 1 – 2 tsp organic expresso powder
- 1 tsp organic orange zest
- For coating: ½ cup of organic powdered sugar
Instructions:
- Mix together cocoa, sugar, and oil. Beat in eggs one at a time, then stir in vanilla bean paste. Combine the flour, baking powder, and salt, expresso powder, stir into the cocoa mixture. Cover dough and chill for at least 2 hours.
- Preheat oven to 350. Cover cookie sheets with parchment paper. Roll dough into 1 inch balls, roll in powder sugar.
- Bake for about 10 minutes. Let sit on baking sheet for a few minutes before placing on cooling rack.
