Elderberry Pear Crisp
Enjoy the immune-boosting benefits of this sweet treat as a snack or dessert! This recipe is also vegan-friendly, gluten free and to top it off, guilt free! This Ultimate Immune-infused crisp is easy to meal prep and will undoubtedly find its way into your weekly snack rotation.

Ingredients:
Topping:
- 1 ½ cup organic old fashioned rolled oats
- ⅔ cup organic chopped pecans
- ⅓ cup organic maple syrup
- ¼ cup melted organic coconut oil
- ¼ cup organic brown sugar
- ¼ cup organic gluten free all purpose flour
- 2 teaspoons organic vanilla extract
- 1 ½ teaspoons organic cinnamon
- ½ teaspoon salt
Filling:
- 6 cups diced, ripe organic pear (or organic apple)
- 2 tbsp organic maple syrup
- ¼ cup organic brown sugar
- 2 tablespoons Uncle Matt’s Ultimate Immune Juice
- 2 teaspoons organic lemon zest
- 3 tablespoons cornstarch
- 1 teaspoon organic vanilla extract
- Pinch of salt
Garnish:
- 1/4 cup organic raspberries
- 1/4 cup organic non-dairy yogurt
Directions:
- Preheat oven to 350˚F.
- Add all topping ingredients to a large mixing bowl and stir well until combined.
- Add all of the filling ingredients to a separate large bowl and stir until fruit is well coated.
- Transfer the filling to a 9” pie tin or cast iron skillet (or 3 smaller ones). Cover filling with crisp topping in an even layer.
- Bake for 40-45 minutes, until topping is golden brown and crispy.
- Remove from oven and let cool 10-15 minutes before serving.
- Top with raspberries and yogurt if desired.
