Vegan Fruit Pizza

After school snacking just got a lot more colorful with this organic fruit pizza. The kiddos are sure to love this sweet treat made with our Organic Superfruit Punch. Make this ahead of time and store in the fridge for stress-free snacking.
Ingredients
Sugar Cookie Crust
- 1 cup vegan butter, softened
- 1 cup organic granulated sugar
- 2 ½ cups organic all-purpose flour
- 1 baking powder
- ¼ baking soda
- ½ salt
- 3 organic non-dairy milk
- 1 organic vanilla extract
Cream Cheese Filling
- 8 ounces vegan cream cheese
- 1 can organic full-fat coconut milk, solids skimmed off
- ⅓ cup organic powdered sugar
- 1 organic vanilla extract
Fruit Topping
- 7-8 large organic strawberries, sliced
- 4 organic kiwi, peeled and sliced
- ½ cup organic blueberries
- ½ cup organic grapes, halved
- ¼ cup organic raspberries
- 1 cup Uncle Matt’s Organic Superfruit Punch
- ½ cup organic granulated sugar
Instructions
- Preheat the oven to 350F. Spray a 14″ pizza pan with cooking spray and set aside.
- Add Uncle Matt’s Organic Superfruit Punch and sugar to a pan. Bring to a boil. Set aside.
- Start by making the crust. In a small bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside. In astand-up mixer, beat together the softened butter and sugar until light and fluffy, scraping the sides as needed. Add the non-dairy milk and vanilla extract, mixing until fully incorporated. Slowly add the flour mixture to the butter/sugar mixture and mix until a uniform dough forms.
- Spread the cookie dough evenly into the prepared pizza pan. Poke a few holes in the crust with a fork and bake the crust for 12-15 minutes, until the edges are golden brown and the cookie is baked in the middle. Remove from the oven and place in the refrigerator or freezer to chill.
- Make the Cream Cheese Filling. To make the filling, scoop out the solids from the coconut milk (top ½ of the can) into a medium-sized bowl. Add vegan cream cheese, sugar, and vanilla and blend with ahand mixer until completely smooth. Refrigerate until ready to use.
- Assemble the Pizza.Once the cookie has chilled, topped it with the cream cheeze filling, spreading it even with an offset spatula. Return the pizza to the refrigerator to let the filling set up while you prepare the fruit.
- Slice the strawberries and kiwi. Cut the grapes in half. Top the chilled pizza with fresh berries, decorating them in concentric circles. Brush Superfruit Punch simple syrup over the berries to give them a shine.
- Serve immediately or return to refrigerator until ready to serve.
