Thai Salad with Orange Peanut Dressing

Dressing Ingredients
- 1/2 cup Uncle Matt’s Organic orange juice
- 1/4 cup organic rice vinegar
- 2 tablespoons organic peanut butter
- 2 tablespoons organic raw cashew butter or almond butter
- 1 teaspoon liquid aminos or reduced sodium soy sauce
- 1 small piece fresh organic ginger, peeled
- 1/4 clove organic garlic
Salad Ingredients
- 1 lb boneless skinless organic chicken breasts, grilled and sliced
- 1 large head organic romaine lettuce, chopped up
- 3 medium organic carrots, peeled and chopped
- 1 large organic red bell pepper, seeded and chopped
- 1 cup shelled organic edamame (optional)
- 2/3 cup organic cashews, roughly chopped
- 1/4 cup organic cilantro leaves, chopped finely
Directions
Blend all dressing ingredients in a high-powered blender until smooth. Add all salad ingredients to a large salad bowl, pour dressing over and toss to evenly coat. Serve immediately.
