Orange Chicken with Capers and Thyme

These tasty chicken thighs are pan-roasted and basted in a bright, citrusy sauce made with Uncle Matt’s Ultimate Defense, apple cider vinegar and honey. With just 10 minutes of prep time, this is a simple main dish that can be perfect for those busy weeknights! Our Ultimate Defense juice adds a delicious blend of orange and pineapple juice, and paired with a mild ginger and turmeric kick, it’s a nutrient-dense meal!
Ingredients:
For the Chicken:
- 5-6 chicken thighs
- 2 cloves minced garlic
- 1/3 cup capers
- 2 sprigs of thyme
- green onions, chopped (for garnish)
For the Sauce:
- 1/2 cup Uncle Matt’s Organic Ultimate Defense
- 2 tbsp apple cider vinegar
- 3 tbsp honey
- 1/4 tsp chili flakes
- pinch of salt
Directions:
- Preheat oven to 400F.
- Whisk together Ultimate Defense juice, apple cider vinegar, honey, red chili flakes and a large pinch of kosher salt. Set aside.
- Heat the oil over medium-high heat in a large (12-inch) enameled or cast iron skillet. Once hot, add the capers, cook for 1 minute then remove from heat.
- Add the chicken thighs to the same pan. Sear without moving them for 8-10 minutes. Flip the thighs and pour the orange juice mixture over top. Add the sprigs of thyme, top each with the already cooked capers and a slice of orange.
- Transfer the pan to the oven to bake for 25-30 minutes, basting the chicken with the cooking liquid at least once.
