Maple Orange Sweet Potato Salad
This dish brings a whole new meaning to side salad! Featuring all the colors and flavors of autumn, this Maple Orange Sweet Potato Salad brings out the sweet and savory tastes of the season. Ingredients:
- 4 cups organic diced sweet potatoes
- ¼ cup sliced organic green onions
- 2 tbsp chopped organic parsley
- ¼ cup dried organic cranberries
- 2 tbsp organic toasted chopped pecans
- 2 tbsp organic pepitas
- ¼ cup Uncle Matt’s Organic Orange Juice
- 1 tbsp organic maple syrup
- 1 tbsp organic Dijon mustard
- 1 tbsp organic olive oil
- ½ tsp organic ground ginger
- Salt and pepper to taste
Directions:
1. Preheat oven to 400 degrees. Line a sheet pan with tin foil. Toss sweet potatoes in olive oil and pour onto pan. Season with salt and pepper. Roast for 20 minutes.
2. Whisk together the orange juice, maple syrup, Dijon mustard, olive oil, ginger, salt and pepper in a small bowl and set aside.
3. To a serving bowl, add green onions, parsley, dried cranberries, pecans pepitas and the roasted sweet potatoes. Toss everything together. Mix in the vinaigrette and serve.
