Firecracker Berry Margarita Float
Looking for a reason to mix our new Superfruit Punch into your next cocktail? How about a 4th of July inspired margarita…with ice cream!? Sounds like the perfect excuse to us! And we can’t forget the kiddos when you make something that looks this delicious. Read on for a kid-friendly, mocktail version too!
Strawberry Margaritas:
1 cup organic strawberries, chopped
1/3 cup organic sugar or honey
1 cup Uncle Matt’s Superfruit Punch
½ cup tequila
2 tbsp Cointreau
1/3 cup organic lime juice
Blueberry Margaritas:
1 cup organic blueberries
1/3 cup organic sugar or honey
1 cup Uncle Matt’s Superfruit Punch
½ cup tequila
2 tbsp Cointreau
1/3 cup organic lime juice
Strawberry Mock-aritas:
1 cup organic strawberries, chopped
1/3 cup organic sugar or honey
1 cup Uncle Matt’s Superfruit Punch
½ cup lemon-lime soda
2 tbsp Uncle Matt’s Orange Juice
1 tbsp organic lime juice
Blueberry Mock-aritas:
1 cup organic blueberries
1/3 cup organic sugar or honey
1 cup Uncle Matt’s Superfruit Punch
½ cup lemon-lime soda
2 tbsp Uncle Matt’s Orange Juice
1 tbsp organic lime juice
Floats:
Salt (for rims of glasses if making margaritas)
2-3 scoops of vanilla ice cream (or preferred vanilla non-dairy version)
Lemon-lime soda water
Organic strawberries and blueberries
Instructions
1. Combine strawberries, sugar and water in a medium sauce pan. Bring to a boil over medium-high heat. Stir occasionally until the fruit breaks down. Usually takes about 5 minutes.
2. Remove from heat and add to a blender. Blend until smooth. Pour the fruit mixture in a large jug and add tequila, Cointreau and lime juice. If making the mocktail version, add lemon-lime soda, orange juice and lime juice instead. Cover and refrigerate until cold.
3. Repeat steps 1 and 2 to make blueberry margaritas (or mocktails) and refrigerate separately.
4. To make the floats, layer 1-2 tablespoons of strawberry margarita and a few fresh strawberries, then layer a scoop of ice cream. Next, layer 1-2 tablespoons of 1-2 tablespoons of blueberry margarita and a few fresh blueberries, then layer a scoop of ice cream. Pour soda water over the top to create a float.
5. Garnish as desired with extra berries. Cheers!
