Smoky Grapefruit Gin and Tonic
Makes 1 cocktail
1 half-wheel slice of organic pink grapefruit
2 oz. gin
1⁄2 oz. Uncle Matt’s Organic grapefruit juice
2 oz. tonic
2 oz. soda
Build a medium-heat fire in a charcoal grill, or heat a gas grill to medium. (Alternatively, heat a cast-iron grill pan over medium-high.) Place grapefruit on grill and cook, turning once, until lightly charred, about 1 minute. Remove from heat and set aside. To an ice-filled rocks glass, add gin and grapefruit juice. Top with tonic and soda, and garnish with grilled grapefruit slice sprinkled with sea salt.
