Superfruit Lemosa

What do you get when you combine homemade blueberry syrup, our delish Superfruit Punch, and champagne – you guessed it, a Superfruit Lemosa! It’s just a like a mimosa, but punchier and purple! You’ll definitely want to add this dreamy drink to your next mimosa bar.
Ingredients:
1 cup organic sugar
1 cup water
2 cups organic blueberries
Zest of 1 organic lemonade
2 cups Uncle Matt’s Superfruit Punch
Juice of 1 organic lemon
1 bottle champagne or prosecco
Optional additional organic blueberries and lemon slices for garnish
Directions:
1. Zest the lemon and set zest aside. Juice the lemon and set lemon juice aside.
2. Make your blueberry syrup by combining water and sugar in a saucepan over medium heat. Stir until sugar has dissolved. Add the blueberries and lemon zest. Bring to a boil. Reduce to a simmer until the blueberries burst. This should take about 5 minutes.
3. Remove the syrup from heat and let cool for about 10 minutes. Strain into a jar and let cool completely.
4. In a pitcher or large bowl, combine Superfruit Punch with the lemon juice. Pour a tablespoon of blueberry syrup into each champagne flute. Pour Superfruit Punch into each glass, then top with champagne or Prosecco. Garnish with extra blueberries and lemon slices. Cheers!
