Cowboy Caviar
It’s time for the Big Game, and whether you’re cheering on your favorite team, waiting for the halftime show, scoping out the commercials or only tuning in to see if Miss Swift makes an appearance, we have an appetizer for everyone! Cowboy Caviar, made with Uncle Matt’s Organic No Sugar Added Lemonade, is your new not-so-guilty pleasure. It’s a healthy starter that’ll have you snacking all game long!
Ingredients:
- 1½ cups cooked organic black beans, drained and rinsed
- 1½ cups cooked organic black-eyed peas, drained and rinsed
- 2 cups organic cherry tomatoes, halved
- 1 cup organic corn kernels
- 1 organic red bell pepper, stemmed, seeded, and diced
- ½ cup organic red onion, diced
- 1 medium organic jalapeño pepper, finely chopped
- 2 tablespoons Uncle Matt’s Organic No Sugar Added Lemonade
- 2 large organic avocados, pitted and diced
- ¼ cup organic cilantro, chopped
- Organic tortilla chips, for serving
Dressing:
- 2 tablespoons plus 1 teaspoon organic red wine vinegar
- 2 tablespoons organic extra-virgin olive oil
- 1 teaspoon organic ground cumin
- ½ teaspoon organic cayenne pepper
- ½ teaspoon honey
- 1 organic garlic clove, minced
- 1½ teaspoons sea salt
- ½ teaspoon freshly ground black pepper
Instructions:
1. In a large bowl, stir together the black beans, black-eyed peas, tomatoes, corn, bell pepper, onion, jalapeño, and lemonade.
2. Make the dressing: In a small bowl, whisk together the the vinegar, oil, cumin, cayenne, honey, garlic, salt, and pepper. Pour the dressing over the bean mixture. Fold in the avocado and cilantro, and season to taste.
3. If time allows, refrigerate for 1 hour to allow the flavors to marry. Serve with tortilla chips.
