Orzo Pasta with Lemon Dressing
Looking for an easy weeknight side dish? This lemon orzo pasta salad made with Uncle Matt’s Organic No Sugar Added Lemonade brings a subtle citrus kick and brightens up any meal. It’s also a great source of rich antioxidants! Serve with baked chicken or salmon and your favorite veggie for a complete meal.
Ingredients:
Dressing:
- ¼ cup Uncle Matt’s Organic No Sugar Added Lemonade
- 2 tbsp organic olive oil
- ¼ tsp red pepper flakes
- ½ tsp black pepper
- Salt to taste
Pasta:
- ½ lb orzo pasta (dried, chickpea)
- 1 bunch organic arugula, chopped
- 1 organic yellow bell pepper, chopped
- 2 organic celery stalks, chopped
- ½ cup organic pomegranate seeds
Directions:
1. Boil orzo pasta according to package directions to cook until al dente.
2. While pasta cooks, add all dressing ingredients to a bowl and mix. Set aside.
3. Drain the cooked pasta, add half of the dressing and mix well. Allow to cool completely.
4. Once cooled, add chopped bell pepper, celery, pomegranate seeds and dressing. Stir to combine. Then add chopped arugula and gently toss. Chill in the fridge until ready to serve.
