Superfruit Ice Cream Float
Whether it’s after school or over the weekend, it’s always a good time to enjoy an ice cream float! This one features our brand new Organic Superfruit Punch making it deliciously purple and an absolute must-try! Plus, you can feel good about serving your kids a sweet treat without a ton of added sugar.
1/2 cup water
1/4 cup Uncle Matt’s Organic Superfruit Punch
2 1/2 cups organic frozen blackberries
1 1/2 cups organic frozen raspberries
2 1/2 cups preferred vanilla ice cream
1/2 cup chilled sparkling water
- Add the water, juice and 2 cups of blackberries and 1 cup of raspberries to a medium sized sauce pan. Cook on medium heat for 8-10 minutes or until the berries cook down and release their juices. Remove from heat and let cool slightly.
- Transfer the berry mixture to a food processor or blender and process until smooth. Strain through a fine sieve into a jug. Cover with plastic wrap. Place in the fridge for 3 hours or until chilled.
- Divide half the berry syrup evenly among serving glasses. Add one-third of the remaining blackberries and raspberries and 1 scoop of ice cream. Continue layering with the syrup, berries and ice cream, finishing with the berries. Top with sparkling water and serve immediately.
