Summer Salad with Orange Turmeric Tahini Dressing

This colorful delight features a blend of fluffy quinoa, sweet red peppers, crisp corn and tender asparagus, all combined with a zesty orange turmeric tahini dressing that’s both flavorful and nutritious. This dish is perfect to enjoy on those warm, sunny days!
Orange Turmeric Tahini Dressing:
1/2 tbsp organic maple syrup
1/4 cup Uncle Matt’s Organic Ultimate Defense
1/4 cup organic tahini
Pinch of Himalayan sea salt
Pinch of black pepper
Summer Salad:
1 cup cooked organic quinoa
6-8 cups of organic baby spinach
1/2 cup organic zucchini spirals
1 organic red bell pepper (diced)
1 cup organic cherry tomatoes (halved)
1 bunch of organic asparagus
1/2 cup organic sweet yellow corn
1 large organic avocado (diced)
Instructions:
For the dressing, blend all ingredients until smooth and creamy. In bowls, layer baby spinach, quinoa, zucchini spirals, red bell pepper, asparagus, sweet corn, cherry tomatoes, and avocado. Drizzle with Orange Turmeric Tahini Dressing just before serving. Enjoy!
