Organic Ambrosia

Thickened with tofu, cornstarch and coconut, this vibrant fruit bowl provides a fresh, dairy-free spin on your family’s classic ambrosia recipe that’s vegan friendly!
Ingredients:
- 1 cup chopped organic pineapple
- 1 cup sliced organic apples
- 1 ½ cups organic orange slices
- 1 ½ cup sliced organic strawberries
- ½ cup shredded organic coconut
- 1 TBSP organic cornstarch
- 1/3 cup Uncle Matt’s Organic No Sugar Added Lemonade
- 3 TBSP organic sugar
- 3 TBSP Uncle Matt’s Organic Orange Juice
- ½ cup organic soft tofu, pureed
- Optional: 1 TSP organic poppy seeds
- Optional: garnish with organic cherries
Directions:
Once you’ve chopped all of your fruit into your desired bite size, mix the fruit and coconut in a bowl. Cover and refrigerate.
Separately, in a saucepan, mix the cornstarch and lemonade. Once mixed, place over medium heat and add the sugar and orange juice. Heat and stir consistently for about 5-10 minutes as you allow the juice mixture to thicken. Remove from heat and allow to cool.
When the juice has completely cooled, mix in the pureed tofu and optional poppy seeds. Let the juice chill in the refrigerator for an hour.
When you are ready to serve the ambrosia, pour the juice dressing over the fruit salad, gently mix and garnish with cherries.
