Our seared scallop salad with a homemade grapefruit vinaigrette is simple to make and sure to impress. Elevate your dinner party\u00a0with the citrus of the season!<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p><strong><em>For the salad:<\/em><\/strong><\/p>\n<ul>\n<li>1\u00a0organic grapefruit<\/li>\n<li>\u00bc cup Uncle Matt\u2019s Organic Grapefruit Juice<\/li>\n<li>1 1\/4\u00a0lb\u00a0sustainably sourced sea scallops,\u00a0washed and dried with a paper towel<\/li>\n<li>2\u00a0teaspoons\u00a0organic extra virgin olive oil<\/li>\n<li>salt and pepper<\/li>\n<li>8\u00a0oz\u00a0organic baby spinach and arugula<\/li>\n<\/ul>\n<p><em><strong>For the champagne vinaigrette:<\/strong><\/em><\/p>\n<ul>\n<li>2\u00a0tablespoons\u00a0organic extra virgin olive oil<\/li>\n<li>1\u00a0tablespoon\u00a0organic champagne vinegar\u00a0(or organic white wine vinegar)<\/li>\n<li>2\u00a0tablespoons\u00a0chopped organic shallots<\/li>\n<li>1\/4\u00a0teaspoon\u00a0salt and pepper<\/li>\n<\/ul>\n<p><strong>Instructions<\/strong><\/p>\n<p>1.\u00a0\u00a0\u00a0 Peel the skin and white membrane off the grapefruit and separate the pieces. Chop up grapefruit for the salad.<\/p>\n<p>2.\u00a0\u00a0\u00a0 In a medium bowl whisk olive oil, grapefruit juice, champagne vinegar, chopped shallots, salt and pepper.<\/p>\n<p>3.\u00a0\u00a0\u00a0 Season scallops with salt and pepper. Heat a large pan on a high heat.<\/p>\n<p>4.\u00a0\u00a0\u00a0 When the pan is hot, add oil and place scallops in the pan.<\/p>\n<p>5.\u00a0\u00a0\u00a0 Sear without touching them for a few minutes until the bottom forms a nice caramel colored crust.<\/p>\n<p>6.\u00a0\u00a0\u00a0 Turn and cook about another minute while their centers are still slightly translucent (you can check this by viewing them from the side).<\/p>\n<p>7.\u00a0\u00a0\u00a0 Be careful not to overcook. Remove from the pan.<\/p>\n<p>8.\u00a0\u00a0\u00a0 Divide the baby greens evenly between four plates.
