The kiddos are sure to love this sweet treat made with our Organic Superfruit Punch. Make this ahead of time and store in the fridge for stress-free snacking.<\/p>\n<h3>Ingredients<\/h3>\n<h4>Sugar Cookie Crust<\/h4>\n<ul>\n<li>1 cup\u00a0vegan butter,\u00a0softened<\/li>\n<li>1 cup organic\u00a0granulated sugar<\/li>\n<li>2 \u00bd cups organic\u00a0all-purpose flour<\/li>\n<li>1\u00a0baking powder<\/li>\n<li>\u00bc\u00a0baking soda<\/li>\n<li>\u00bd\u00a0salt<\/li>\n<li>3 organic\u00a0non-dairy milk<\/li>\n<li>1 organic\u00a0vanilla extract<\/li>\n<\/ul>\n<h4>Cream Cheese Filling<\/h4>\n<ul>\n<li>8 ounces vegan cream cheese<\/li>\n<li>1 can\u00a0organic full-fat coconut milk,\u00a0solids skimmed off<\/li>\n<li>\u2153 cup\u00a0organic powdered sugar<\/li>\n<li>1\u00a0organic vanilla extract<\/li>\n<\/ul>\n<h4>Fruit Topping<\/h4>\n<ul>\n<li>7-8 large\u00a0organic strawberries,\u00a0sliced<\/li>\n<li>4 organic kiwi,\u00a0peeled and sliced<\/li>\n<li>\u00bd cup organic\u00a0blueberries<\/li>\n<li>\u00bd cup\u00a0organic grapes,\u00a0halved<\/li>\n<li>\u00bc cup\u00a0organic raspberries<\/li>\n<li>1 cup Uncle Matt\u2019s Organic Superfruit Punch<\/li>\n<li>\u00bd cup organic granulated sugar<\/li>\n<\/ul>\n<h3>Instructions<\/h3>\n<ol>\n<li>Preheat the oven to 350F. Spray a 14&#8243; pizza pan\u00a0with cooking spray and set aside.<\/li>\n<li>Add Uncle Matt\u2019s Organic Superfruit Punch and sugar to a pan. Bring to a boil. Set aside.<\/li>\n<li>Start by making the crust. In a small bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside. In astand-up mixer, beat together the softened butter and sugar\u00a0until light and fluffy, scraping the sides as needed. Add the non-dairy milk and vanilla extract, mixing until fully incorporated. Slowly add the flour mixture to the butter\/sugar mixture and mix until a uniform dough forms.<\/li>\n<li>Spread the cookie dough evenly into the prepared pizza pan. Poke a few holes in the crust with a fork and bake the crust for 12-15 minutes, until the edges are golden brown and the cookie is baked in the middle. Remove from the oven and place in the refrigerator or freezer to chill.<\/li>\n<li>Make the Cream Cheese Filling. To make the filling, scoop out the solids from the coconut milk (top \u00bd of the can) into a medium-sized bowl. Add vegan cream cheese, sugar, and vanilla and blend with ahand mixer\u00a0until completely smooth. Refrigerate until ready to use.<\/li>\n<li>Assemble the Pizza.Once the cookie has chilled, topped it with the cream cheeze filling, spreading it even with an offset spatula. Return the pizza to the refrigerator to let the filling set up while you prepare the fruit.<\/li>\n<li>Slice the strawberries and kiwi. Cut the grapes in half. Top the chilled pizza with fresh berries, decorating them in concentric circles.
