Vegetable Rice Bowl with Orange Chipotle Dressing
Enjoy this roasted vegetable rice bowl with a creamy orange chipotle dressing during a busy weeknight in under 30 minutes. 1/4 cup of Uncle Matt’s Organic OJ (pulp-free)
3/4 cup of plain organic coconut yogurt
2 organic garlic cloves
2 chipotle peppers
2 tbsp of extra virgin organic olive oil
1 tsp of organic lime juice
Salt + Pepper to taste
Dressing Directions: Add all ingredients into a blender or food processor and blend for 45 seconds or until smooth. Store in an airtight container.
1/4 cup of uncooked organic brown rice
1/3 cup of organic chickpeas
1/4 cup of organic broccoli
1/4 organic red pepper, sliced
1/4 organic avocado, cut into cubes
1 tbsp of scallions, sliced
2-3 sprigs of organic parsley
1 lime wedge
1 tbsp of organic olive oil
Cook rice according to package. Place chickpeas and broccoli on a baking sheet and drizzle with 1 tbsp of olive oil. Roast chickpeas and broccoli in the oven at 400 degrees F for 25 minutes. Add all ingredients to the bowl. Drizzle dressing on top.
