Strawberry Spinach Salad with Cilantro Lime Dressing

Salad:
2 cups organic spinach
½ cup organic strawberries, sliced
½ medium organic cucumber, sliced
1 tbsp chopped organic pistachios
Dressing:
1 organic lime, juiced
¼ cup organic olive oil
2 tbsps. organic honey
1 tbsp organic apple cider vinegar
¼ cup chopped organic cilantro
Organic salt and pepper to taste
For the dressing, blend ingredients in a food processor or blender until smooth. Refrigerate leftovers in an air-tight container.
