Spicy Garlic Ginger Edamame

This sweet and spicy edamame gets a citrusy twist from Uncle Matt’s Organic Ginger Honey Lemonade. It’s quick, craveable, and made with all organic ingredients—perfect for game nights, appetizers, or a wholesome midday bite.
Ingredients:
- 1 lb fresh or frozen organic edamame in pods
- 1 tbsp organic avocado oil
- 1 tbsp organic garlic
- 1/2 cup Uncle Matt’s Organic Ginger Honey Lemonade
- 2 tbsp organic soy sauce
- 2 tbsp organic red chili paste
- 2-3 tsp organic honey
- Salt and Pepper
Instructions:
- Cook the Edamame
- To boil: Bring a large pot of water to a boil with a pinch of salt. Add the edamame and cook until bright green and heated through, 3-5 minutes. Drain well.
- To microwave: Add edamame to a microwave-safe bowl with 1/4 cup water and a pinch of salt. Cover loosely and microwave on high for 1-5 minutes, until hot and vibrant green. Drain.
- Make the Sauce
- Heat avocado oil in a skillet over medium heat. Add the garlic, cooking until fragrant, about 30-60 seconds.
- Stir in Uncle Matt’s Organic Ginger Honey Lemonade, soy sauce, honey, and red chili paste. Remove from heat.
- Toss & Serve
- Add the cooked edamame to the sauce and toss to coat. Serve warm!
