Orange Sweetheart Pancakes
What’s better than heart-shaped pancakes on Valentines Day? Heart-shaped pancakes on Valentine’s Day with a glass of Uncle Matt’s Organic Orange Juice on the side! If you like to celebrate the zest days of the year with special meals, treat your main squeeze to this delish breakfast.
Ingredients:
Pancakes:
- 2 cups organic all-purpose flour
- 2 tablespoons organic sugar
- 1 heaping teaspoon baking powder
- 1 heaping teaspoon baking soda
- 1 pinch salt
- 2-2/3 cups organic buttermilk
- 2 large organic eggs
- 1 tsp organic vanilla extract
- 3 tablespoons organic canola oil
- Vegetable oil spray for the pan
On the side:
- 1 52oz bottle of Uncle Matt’s Organic Orange Light Juice (or other preferred Uncle Matt’s OJ)
- 1 cup organic blueberries
- Uncle Matt’s Orange Syrup
Optional garnishes:
- 2 tbsps powdered sugar
- 1 sprig of mint
Directions:
Combine the dry ingredients in a bowl. Add the buttermilk, eggs, vanilla, and oil. Whisk until smooth with a wire whisk. This pancake batter should be a tiny bit thinner so you can spread it into a heart mold. It is ok to add a little water if needed.
Heat a nonstick skillet on medium high. Place a 3 inch heart cookie cutter in the frying pan and spray the cutter and the pan with nonstick spray. Add the pancake batter into the heart and use a spoon or spatula to spread it into the cutter to the edges.
When the pancake bubbles lift off the mold and flip the pancake with a spatula. When the pancake is firm in the center and brown on all sides take it out of the pan.
It helps to have several heart molds so you can make them faster. Serve with blueberries, syrup, and a side of Uncle Matt’s Organic Juice. Optional garnish: a little dust of powdered sugar and a sprig of mint.
