Orange Hot Honey Chicken

Ingredients:
- 2 lbs organic chicken thighs
- 6 cups Arrowhead Mills Organic Gluten Free Maple Buckwheat Cereal
- 1/4 cup grated organic parmesan cheese
- 1 tsp organic smoked paprika
- 1/2 tsp organic garlic powder
- 1/2 tsp organic onion powder
- 2 large organic eggs, beaten
- 2 Tbsp favorite organic hot sauce
Sauce Ingredients:
- 1 tbsp organic olive oil
- ½ cup Uncle Matt’s Organic Orange Juice
- 1 tsp fresh grated organic ginger
- 2 cloves organic minced garlic
- 1/2 cup honey
- 2 tsp organic cayenne pepper
- 1/2 tsp organic garlic powder
- 1/2 tsp organic onion powder
- Sea salt
- 2 TBSP cornstarch
- 1/4 warm water
- Organic thyme for topping
Directions:
1. In food processor, combine the cereal, parmesan, paprika, onion powder, garlic powder, and a pinch of salt. Once you have a fine powder pour mixture into a bowl.
2. Beat eggs and hot sauce until a well combined mixture is made.
3. Add chicken into hot sauce mixture and coat thoroughly.
4. Remove chicken and toss in cereal mixture to coat.
5. Place in an air fryer basket. Turn temperature to 325° and cook for 10 minutes on each side.
6. While the chicken is cooking, coat a medium sauce pot with olive oil over medium heat, and add garlic and ginger. Allow to cook for 3 minutes stirring continuously to keep from sticking and burning.
7. Add in orange juice, spices, followed by honey.
8. Allow to reduce slightly.
9. Mix together warm water and cornstarch. Add to the sauce and stir thoroughly. Remove from heat once sauce thickens.
10. Remove fully cooked chicken from the air fryer. Use a brush to apply sauce/glaze mixture. Top with thyme and get ready for a flavor explosion!
