Orange Chili Crisp Salmon Bowl

Ingredients:
8 oz. salmon, skin removed and cut into bite-size cubes
¼ cup @unclemattsorganic Orange Juice
2 tbsp organic soy sauce (or tamari)
1-2 tbsp organic chili crisp (adjust for spice preference)
1 tsp organic cornstarch
1 cup organic uncooked rice
For the bowl:
1 cup organic cucumber, diced
1 cup organic shelled edamame (steamed)
1 organic avocado, sliced
½ cup shredded organic carrots
Optional for topping: extra chili crisp, sesame seeds and green onion
Instructions:
1. Preheat the air fryer to 400 F.
2. Cook rice according to package instructions.
3. In a small saucepan, whisk together orange juice, soy sauce, crispy chili onion oil, and cornstarch. Simmer over medium heat for 2-3 minutes until slightly thickened and glossy.
4. Toss salmon cubes lightly with cornstarch, then air fry for 7-9 minutes, until cooked through and lightly crisped. Toss warm salmon in the sauce to coat.
5. Assemble bowls with rice, cucumber, edamame, avocado, and carrots. Top with sauced salmon and finish with optional toppings.
This makes 2 servings.
