Lemonade Salmon
Brighten up your backyard picnic table this summer with this gorgeous citrusy salmon. Studded with fresh lemon slices alongside our No Sugar Added Lemonade marinade, these vibrant salmon filets taste like summer vacation – with loads of nutrients, too!
Ingredients:
- 1 cup Uncle Matt’s No Sugar Added Lemonade
- ¼ cup organic soy sauce
- 2 tablespoons organic olive oil, plus more for drizzling
- 2 teaspoons fresh organic ginger, minced
- 2 tablespoons organic brown sugar
- 2 organic garlic cloves, minced
- 1 organic lemon, juice and zest of, plus 1 organic lemon, cut into thin rounds
- kosher salt & freshly ground black pepper
- 4 sustainably sourced salmon fillets
- 1 organic green onion, chopped
Directions:
- Preheat the oven to 425° F. Line a baking sheet with parchment paper or foil.
- In a medium bowl, whisk together the lemonade, soy sauce, olive oil, ginger, brown sugar, garlic, lemon zest, ½ teaspoon salt and ¼ teaspoon pepper.
- Put the salmon in a dish and pour the marinade over. Cover and refrigerate 1 hour, flipping halfway through.
- Remove the salmon from the marinade and season with salt and pepper. Discard the remaining liquid.
- Roast the salmon for about 12 minutes then garnish with green onions and lemon slices.
