Lemonade Coconut Macaroons

Here’s a bright, citrusy twist on classic, chewy coconut macaroons! Made with Uncle Matt’s Organic No Sugar Added Lemonade and only 7 ingredients, they’re the perfect after school snack or mid-day pick me up! They bake up golden on the outside and soft on the inside. As an added bonus, you can dip them in white chocolate for an extra treat!
Ingredients:
14 oz organic sweetened shredded organic coconut
14 oz organic sweetened organic condensed milk
2 1/2 organic tbsp lemon zest
3 tbsp Uncle Matt’s Organic No Sugar Added Lemonade
1/2 tsp organic vanilla extract
2 organic eggs, only the whites, room temperature
1/2 cup organic white chocolate-melted
Instructions:
- Heat oven to 325°F and line a baking sheet with parchment.
- Stir coconut, condensed milk, lemon zest, lemonade, and vanilla together in a large bowl.
- Beat egg whites until stiff peaks form, then fold into the coconut mixture.
- Scoop small mounds onto the baking sheet and bake 20–25 minutes, until edges are golden.
Optional: Dip macaroons in melted white chocolate or drizzle over top
