Juicy Orange Christmas Cookies

Ingredients
2 cups and 2 tablespoons all-purpose organic flour
1 1/4 teaspoons baking powder
1/2 teaspoon salt
3/4 cup organic white sugar
1/2 cup organic unsalted butter, softened
1 tablespoon orange peel zest
1 large organic egg
1/2 cup Uncle Matt’s Organic OJ
For the Glaze:
1 cup organic powdered sugar (120g)
Zest from 1/2 an organic orange
1-2 tbsp Uncle Matt’s Organic OJ
1 tablespoon melted unsalted butter
Instructions:
Preheat your oven to 375°F. In a medium bowl, whisk together the flour, baking powder, and salt. Set this mixture aside. In a large mixing bowl or the bowl of a stand mixer with the paddle attachment, beat together sugar, butter, and zest on medium speed.
Continue beating until the mixture is light and fluffy, approximately 3 minutes. Add the egg to the mixture and beat until well combined. With the mixer set to low speed, gradually add the dry flour mixture to the butter mixture.
Alternate with the orange juice, making sure to fully combine everything. Pause occasionally to scrape down the sides of the bowl, ensuring all ingredients are well combined.
Scoop the dough into 1-tablespoon-sized balls and place them onto the prepared baking sheet, spacing them about 2 inches apart. Bake one sheet at a time in your preheated oven for about 10 minutes.
The cookies are done when the centers appear dry and feel firm to the touch. Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
In a small bowl, whisk together confectioners’ sugar, zest, juice, and melted butter until the mixture is smooth. Spread the glaze over the top of each cooled cookie.
Allow the cookies to stand until the glaze sets, which should take approximately 20 minutes.
