Grapefruit Prosciutto Salad
Winter months call for enjoying grapefruit in as many ways as possible – in this case, as a salad topping and dressing! Taste all the fresh flavors in this colorful, organic salad made with avocado, goat cheese, dates and prosciutto.
Ingredients:
- 2 tbsp Uncle Matt’s Organic Grapefruit Juice
- 1 tbsp organic sesame oil
- Pinch of salt and pepper
- 6 cups organic mixed greens
- ½ organic grapefruit, peeled and quartered
- 6 slices of prosciutto
- 1 cup organic goat cheese
- ½ cup organic dates
- 1 organic avocado, peeled and chopped
Directions:
Add grapefruit juice, sesame oil, salt and pepper to a bowl and whisk. Add greens to the bowl and toss in the dressing. Plate the greens and add the toppings. Enjoy!
