Grapefruit Ceviche

Seafood and citrus, what a pair! If you’ve been waiting for an opportunity to make your own ceviche, this is your dish! Savor these complementary flavors in this delish main event featuring Uncle Matt’s Organic Grapefruit Juice and an assortment of seafood delicacies.

Serves: 6-8
Ingredients:
- ½ lb organic scallops, cut into ¼” pieces
- ½ lb sustainably sourced shrimp peeled and deveined, cut into ¼” pieces
- Juice from 1 large organic lime (3-4 tbsp)
- 1 tsp kosher salt
- 2 tbsp olive oil
- 2 organic grapefruit, peeled, supremed and diced into ½” pieces
- 2 tbsp Uncle Matt’s Organic Grapefruit Juice
- 1 small organic jalapeño, finely minced
- 1 tsp organic honey
- ½ of an organic red onion, thinly sliced
- 1 cup fresh organic mint, finely chopped
Directions:
In a large bowl, whisk together lime juice, salt, oil, grapefruit juice and honey.
Add in scallops, shrimp, grapefruit pieces, jalapeño, onion and mint. Stir until well combined.
Cover and refrigerate for at least 30 minutes, or up to 2 hours, stirring occasionally. Serve chilled.
