Cranberry & Orange Glazed Salmon

Ingredients
4 salmon fillets (about 6 oz each)
1 cup fresh organic cranberries
1/2 cup Uncle Matt’s Organic OJ
2 tbsp honey
1 tbsp organic olive oil
1 tbsp organic Dijon mustard
1 tbsp fresh orange zest
Salt and pepper, to taste
1 tbsp chopped fresh organic parsley (for garnish)
Instructions
Preheat the oven to 400°F.
Prepare the Cranberry-Orange Glaze: In a small saucepan, combine the cranberries, orange juice, honey, and Dijon mustard. Bring to a simmer over medium heat, stirring occasionally. Cook for about 10 minutes, or until the cranberries burst and the sauce thickens. Remove from heat and stir in the fresh orange zest.
Prepare the Salmon: Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle olive oil over the fillets and season with salt and pepper.
Glaze the Salmon: Spoon a generous amount of the cranberry-orange glaze over each salmon fillet, reserving some for serving.
Bake the Salmon: Bake the salmon for 12-15 minutes, or until the fish flakes easily with a fork and reaches an internal temperature of 145°F.
Serve: Once the salmon is cooked, remove from the oven and drizzle with the remaining glaze. Garnish with freshly chopped parsley and serve immediately.
