Carrot Ribbon Salad with Ginger Orange Dressing

Ingredients
3 large organic carrots, peeled and washed
1/4 organic purple onion, thinly sliced
Fresh chopped organic parsley, for garnish
Black organic sesame seeds, for garnish
Dressing
3 tbsp organic olive oil
2 tbsp Uncle Matt’s Pulp Free Orange Juice
2 tbsp organic rice vinegar
1 tsp grated fresh organic ginger
1 tbsp honey Salt and pepper, to taste
Directions Using a vegetable peeler, shave the carrots into thin ribbons and place into a bowl. Add the sliced purple onion and chopped parsley.
In a small bowl, whisk together olive oil, orange juice, rice vinegar, grated ginger, honey, salt, and pepper until well combined.
Pour the dressing over the carrots and onion and toss until evenly coated.
Top with black sesame seeds before serving.
