Want a healthy start to your day with a delicious muffin that also packs a nutrient punch? With Uncle Matt’s OJ, applesauce, shredded carrots and organic oats, these muffins satisfy the pickiest of eaters and everyone will love the fresh taste of Uncle Matt’s OJ inside!
Servings: 12 muffins
Dry Ingredients
  • 1 3/4 cup organic oat flour (gluten-free, if necessary)
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp organic cinnamon
  • 1/4 tsp organic ginger
Wet Ingredients
  • 1/4 cup organic coconut oil, melted
  • 1/2 cup organic cane sugar
  • 1/2 cup organic applesauce
  • 1/4 cup Uncle Matt’s Organic Orange Juice
  • zest of 2 organic oranges
  • 1 tsp organic vanilla
  • 2 organic eggs
  • 1 cup shredded organic carrots
  1. Preheat your oven to 350 and spray a muffin pan with non-stick spray, or line with cupcake liners.

  2. In a small mixing bowl, stir together the dry ingredients.

  3. In another small bowl, combine your applesauce and Uncle Matt’s Organic orange juice and microwave till they are room temperature (maybe 15 seconds or so). This will help to stop the coconut oil from returning to a solid.

  4. Next, in a large mixing bowl, whisk together your coconut oil and sugar. Pour in your applesauce, Uncle Matt’s orange juice, orange zest, vanilla and eggs, and whisk together until all is well incorporated.

  5. Pour the dry ingredients into your wet ingredients and stir until everything is well combined.

  6. Add your shredded carrots and fold them into the batter.

  7. Pour your batter into the muffin pan, filling each well about 3/4 of the way full.

  8. Bake for 15-17 minutes or till the muffins are set on top and a toothpick comes out clean.

  9. After cooling for about 10-15 minutes, remove them from your muffin pan to a cooling rack and let cool.

Wassail is a delicious holiday drink and perfect for the colder months. It’s a hot cider drink that combines the flavors of oranges and apples with cinnamon and spices. What’s not to like about that? Plus, it features Uncle Matt’s Organic OJ, so it’s super easy to whip up and kid friendly, too!


2 organic apples

8 cups organic apple cider

2 cups Uncle Matt’s Organic orange juice

1/3 cup lemon juice

4 cinnamon sticks

15 whole cloves ,or 1/2 tsp ground cloves

1/4 teaspoon ground organic ginger

1/4 teaspoon ground organic nutmeg

1 tablespoon light brown sugar (optional)

Poke the whole cloves into the apples on all sides. Add all of the ingredients, including the apples, to a large pot over medium low heat.
Bring to a simmer. Simmer for 30-45 minutes. Remove the apples and whole cloves. Ladle into mugs and enjoy!

4 organic eggs
3/4 cup Uncle Matt’s Organic Orange Juice
1/2 cup of organic milk
1/2 tsp. cinnamon
12 slices of your favorite toast/bread
2 tbsp. of organic butter


In a bowl, whisk together the organic eggs, Uncle Matt’s Orange Juice, organic milk and cinnamon. Then, dip each slice of bread into the egg mixture until completely coated. Repeat process with remaining slices. In a skillet or griddle, melt one tablespoon of organic butter over medium heat. Place the dipped bread slice onto griddle and cook for 3-4 minutes on each side until golden.

Serve and enjoy. Top with fresh organic fruit if desired.

This watermelon, arugula and feta salad is a perfect blend of greens and the fresh, light taste of organic watermelon with feta cheese. Best of all, the dressing contains Uncle Matt’s Organic OJ!


1/4 cup freshly squeezed Uncle Matt’s Organic orange juice
1/4 cup freshly squeezed organic lemon juice (2 lemons)
1/4 cup minced organic shallots (1 large)
1 tablespoon honey
1/2 cup organic olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
6 cups organic baby arugula, washed and spun dry
1/8th seedless organic watermelon, rind removed, and cut in 1-inch cubes
12 ounces organic feta cheese, 1/2-inch diced
1 cup (4 ounces) whole fresh mint leaves, julienned


  1. Whisk together the Uncle Matt’s Organic orange juice, lemon juice, shallots, honey, salt, and pepper. Slowly pour in the olive oil, whisking constantly, to form an emulsion. If not using within an hour, store the vinaigrette covered in the refrigerator.
  2. Place the arugula, watermelon, feta, and mint in a large bowl. Drizzle with enough vinaigrette to coat the greens lightly and toss well. Taste for seasonings and serve immediately.

The fall season is underway, and as it turn cooler with a nip in the air, one of our favorite ways is to warm up is with some apple cider. Try this recipe featuring Uncle Matt’s Organic apple juice to keep things simple, delicious and organic!
12 cups of Uncle Matt’s Organic apple juice
6 cinnamon sticks
1/2 cup of good quality jarred caramel sauce, plus more for drizzling
Organic whipped cream
Heat apple juice and cinnamon sticks in the slow cooker for about 4 hours on high. Let the cinnamon sticks soften and uncurl. Before serving, stir in 1/2 cup of caramel sauce and serve in heat proof cups. Top with whipped cream and a drizzle of caramel (use non-dairy whip cream if you are lactose intolerant or have dairy allergies).

1 cup Uncle Matt’s Organic orange juice (or Uncle Matt’s Organic Orange Juice with Turmeric & Probiotics)

2 teaspoons fresh organic minced ginger

1/2 teaspoon turmeric

1 cup ice cubes


Add all ingredients to the blender and blend until smooth, about 60 to 90 seconds. Add 1/2 cup of your favorite nuts for a creamier texture, or almond/coconut milk. You can also add your favorite protein powder to make it a complete meal.

Servings: About 2 cups

Citrus Marinated Beets Mon, 09 Jul 2018 18:28:33 +0000 more]]> If you’ve never tried beets because you’ve been afraid of them, or were forced against your will to eat them as a kid (we hear you!), this recipe will forever change your mind about this beautiful deep red veggie.  Plus, what’s not to like about beets when they get marinated in Uncle Matt’s Organic OJ? Yum!


1/2 lb organic beets washed, peeled, and quartered into chunks

1/2 tbsp extra virgin olive oil avocado oil (or coconut oil)

1/3 cup Uncle Matt’s Organic orange juice


Preheat the oven to 400F.

Arrange the organic beet chunks on a cookie/sheet pan, lined with non-stick aluminum foil (optional for easy clean up). Drizzle the olive or avocado oil over the beets, and then use your hands to toss and blend well.

Roast the beets, uncovered, for 30-35 minutes, until soft when pierced with a fork.

Once the beets are cool enough to handle, place the beets in a storage containers. Pour Uncle Matt’s Organic orange juice over the beets, and toss to coat the beets in the juice. The beets won’t be fully submerged in the orange juice.

The beets will keep in the fridge, in an air-tight container, for up to a week. Use the beets to top on salads, on a fish or chicken dish, or blended in smoothies. Or, just eat right out of the container!

Citrus Marinated Grilled Shrimp Tue, 12 Jun 2018 22:30:34 +0000 more]]> If you’re looking for an easy breezy weeknight meal with all of the flavor with little to no clean-up, this is it. Shrimp are a healthy protein low in fat and when marinated in a yummy combo of Uncle Matt’s Orange Juice, herbs, and honey, it’s a mouth-watering winner.


2 pounds fresh unpeeled jumbo shrimp
1 cup Uncle Matt’s Organic Orange Juice, divided
1/4 cup organic honey
2 tablespoons water
1 tablespoon organic fresh basil, chopped
1 tablespoon organic fresh thyme, chopped

Peel and devein shrimp. Wash and pat dry. Put in heavy-duty Ziplock bag.

Combine 1/2 cup orange juice, honey, and next three ingredients. Pour over shrimp. Seal bag and refrigerate for 1 to 2 hours.

Take a water pan and position it on the grill, either down in the fire area or on a lower rack. Put remaining orange juice in the pan and drain off marinade into the pan as well.

Thread the shrimp onto skewers that have been soaked for at least 30 minutes in water or place the shrimp on a small-holed grill rack.
Cook on low heat over the pan until shrimp are opaque. Discard liquid in pan.

Yield: 4-6 servings

1 cup organic unsalted butter

2 cups all purpose organic flour

1/2 cup granulated organic cane sugar

1/4 teaspoon salt


1/2 cup Uncle Matt’s Organic Orange Juice

1 teaspoon orange zest

1 1/2 cups granulated organic sugar

1/4 cup all purpose organic flour

1/2 teaspoon baking powder

4 large organic eggs

Powdered sugar, for dusting


  1. Preheat oven to 350F. Line a 9×13” pan with foil or parchment paper and spray with nonstick cooking spray (preferably organic).
  2. Beat butter with a hand or a stand mixer until creamy, then add the flour, sugar, and salt and beat until a dough forms. (If you’re using a hand mixer it will take extra time.) Press the crust into the bottom of the prepared pan. Bake for 18 minutes.
  3. A few minutes before the crust comes out of the oven, prepare the filling. Place all filling ingredients into a blender jar and blend until smooth, a few seconds to almost a minute, depending on your blender.
  4. Carefully pour filling over evenly over hot crust. Return to oven and bake until the top is no longer jiggly, about 20-23 minutes. Cool completely before dusting with powdered sugar and slicing into bars.
