Ingredients:

4 organic eggs
3/4 cup Uncle Matt’s Organic Orange Juice
1/2 cup of organic milk
1/2 tsp. cinnamon
12 slices of your favorite toast/bread
2 tbsp. of organic butter

Instructions:

In a bowl, whisk together the organic eggs, Uncle Matt’s Orange Juice, organic milk and cinnamon. Then, dip each slice of bread into the egg mixture until completely coated. Repeat process with remaining slices. In a skillet or griddle, melt one tablespoon of organic butter over medium heat. Place the dipped bread slice onto griddle and cook for 3-4 minutes on each side until golden.

Serve and enjoy. Top with fresh organic fruit if desired.

This watermelon, arugula and feta salad is a perfect blend of greens and the fresh, light taste of organic watermelon with feta cheese. Best of all, the dressing contains Uncle Matt’s Organic OJ!

Ingredients

1/4 cup freshly squeezed Uncle Matt’s Organic orange juice
1/4 cup freshly squeezed organic lemon juice (2 lemons)
1/4 cup minced organic shallots (1 large)
1 tablespoon honey
1/2 cup organic olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
6 cups organic baby arugula, washed and spun dry
1/8th seedless organic watermelon, rind removed, and cut in 1-inch cubes
12 ounces organic feta cheese, 1/2-inch diced
1 cup (4 ounces) whole fresh mint leaves, julienned

Directions

  1. Whisk together the Uncle Matt’s Organic orange juice, lemon juice, shallots, honey, salt, and pepper. Slowly pour in the olive oil, whisking constantly, to form an emulsion. If not using within an hour, store the vinaigrette covered in the refrigerator.
  2. Place the arugula, watermelon, feta, and mint in a large bowl. Drizzle with enough vinaigrette to coat the greens lightly and toss well. Taste for seasonings and serve immediately.

The fall season is underway, and as it turn cooler with a nip in the air, one of our favorite ways is to warm up is with some apple cider. Try this recipe featuring Uncle Matt’s Organic apple juice to keep things simple, delicious and organic!
Ingredients
12 cups of Uncle Matt’s Organic apple juice
6 cinnamon sticks
1/2 cup of good quality jarred caramel sauce, plus more for drizzling
Organic whipped cream
 
Directions
Heat apple juice and cinnamon sticks in the slow cooker for about 4 hours on high. Let the cinnamon sticks soften and uncurl. Before serving, stir in 1/2 cup of caramel sauce and serve in heat proof cups. Top with whipped cream and a drizzle of caramel (use non-dairy whip cream if you are lactose intolerant or have dairy allergies).

  • ¼ cup sliced organic nectarines (or peaches)
  • 1 teaspoon chia seeds or flax seeds
  • 1 tablespoon unsweetened coconut flakes

Instructions

  1. Blend all smoothie ingredients (mango through ice).
  2. Pour into a bowl and top with berries, sliced banana and nectarines, chia seeds, and coconut flakes.

1 cup Uncle Matt’s Organic orange juice (or Uncle Matt’s Organic Orange Juice with Turmeric & Probiotics)

2 teaspoons fresh organic minced ginger

1/2 teaspoon turmeric

1 cup ice cubes

Instructions

Add all ingredients to the blender and blend until smooth, about 60 to 90 seconds. Add 1/2 cup of your favorite nuts for a creamier texture, or almond/coconut milk. You can also add your favorite protein powder to make it a complete meal.

Servings: About 2 cups

Yum!

Ingredients

1/2 lb organic beets washed, peeled, and quartered into chunks

1/2 tbsp extra virgin olive oil avocado oil (or coconut oil)

1/3 cup Uncle Matt’s Organic orange juice

Instructions

Preheat the oven to 400F.

Arrange the organic beet chunks on a cookie/sheet pan, lined with non-stick aluminum foil (optional for easy clean up). Drizzle the olive or avocado oil over the beets, and then use your hands to toss and blend well.

Roast the beets, uncovered, for 30-35 minutes, until soft when pierced with a fork.

Once the beets are cool enough to handle, place the beets in a storage containers. Pour Uncle Matt’s Organic orange juice over the beets, and toss to coat the beets in the juice. The beets won’t be fully submerged in the orange juice.

The beets will keep in the fridge, in an air-tight container, for up to a week. Use the beets to top on salads, on a fish or chicken dish, or blended in smoothies. Or, just eat right out of the container!

Shrimp are a healthy protein low in fat and when marinated in a yummy combo of Uncle Matt’s Orange Juice, herbs, and honey, it’s a mouth-watering winner.

Ingredients:

2 pounds fresh unpeeled jumbo shrimp
1 cup Uncle Matt’s Organic Orange Juice, divided
1/4 cup organic honey
2 tablespoons water
1 tablespoon organic fresh basil, chopped
1 tablespoon organic fresh thyme, chopped

Peel and devein shrimp. Wash and pat dry. Put in heavy-duty Ziplock bag.

Combine 1/2 cup orange juice, honey, and next three ingredients. Pour over shrimp. Seal bag and refrigerate for 1 to 2 hours.

Take a water pan and position it on the grill, either down in the fire area or on a lower rack. Put remaining orange juice in the pan and drain off marinade into the pan as well.

Thread the shrimp onto skewers that have been soaked for at least 30 minutes in water or place the shrimp on a small-holed grill rack.
Cook on low heat over the pan until shrimp are opaque. Discard liquid in pan.

Yield: 4-6 servings

Ingredients:

Crust:

1 cup organic unsalted butter

2 cups all purpose organic flour

1/2 cup granulated organic cane sugar

1/4 teaspoon salt

Filling:

1/2 cup Uncle Matt’s Organic Orange Juice

1 teaspoon orange zest

1 1/2 cups granulated organic sugar

1/4 cup all purpose organic flour

1/2 teaspoon baking powder

4 large organic eggs

Powdered sugar, for dusting

 

Directions:
  1. Preheat oven to 350F. Line a 9×13” pan with foil or parchment paper and spray with nonstick cooking spray (preferably organic).
  2. Beat butter with a hand or a stand mixer until creamy, then add the flour, sugar, and salt and beat until a dough forms. (If you’re using a hand mixer it will take extra time.) Press the crust into the bottom of the prepared pan. Bake for 18 minutes.
  3. A few minutes before the crust comes out of the oven, prepare the filling. Place all filling ingredients into a blender jar and blend until smooth, a few seconds to almost a minute, depending on your blender.
  4. Carefully pour filling over evenly over hot crust. Return to oven and bake until the top is no longer jiggly, about 20-23 minutes. Cool completely before dusting with powdered sugar and slicing into bars.

Ingredients
  • 1 12 oz box organic vanilla wafer cookies, crushed
  • 3/4 cup organic powdered sugar
  • 1/2 cup organic walnut pieces or any other chopped nut
  • 3/4 cup shredded organic coconut
  • 1/2 cup Uncle Matt’s Organic Pulp Free Orange Juice
Instructions
  1. Combine all ingredients, mixing well until evenly coated.
  2. Roll into 1 inch balls with your hands and place on a wax paper lined baking sheet.
  3. Refrigerate for at least an hour.
  4. Store in an airtight container and keep refrigerated.
  5. These will freeze well.

Dressing Ingredients

1/2 cup Uncle Matt’s Organic orange juice
1/4 cup rice vinegar
2 tablespoons organic peanut butter
2 tablespoons organic raw cashew butter or almond butter
1 teaspoon liquid aminos or reduced sodium soy sauce
1 small piece fresh ginger, peeled
1/4 clove garlic

Salad Ingredients

1 lb boneless skilled chicken breasts, grilled and sliced
1 large head organic romaine lettuce, chopped up
3 medium organic carrots, peeled and chopped
1 large organic red bell pepper, seeded and chopped
1 cup shelled edamame (optional)
2/3 cup cashews, roughly chopped
1/4 cup cilantro leaves, chopped finely

Directions

Blend all dressing ingredients in a high-powered blender until smooth. Add all salad ingredients to a large salad bowl, pour dressing over and toss to evenly coat. Serve immediately.
