Ingredients:

4 organic eggs
3/4 cup Uncle Matt’s Organic Orange Juice
1/2 cup of organic milk
1/2 tsp. cinnamon
12 slices of your favorite toast/bread
2 tbsp. of organic butter

Instructions:

In a bowl, whisk together the organic eggs, Uncle Matt’s Orange Juice, organic milk and cinnamon. Then, dip each slice of bread into the egg mixture until completely coated. Repeat process with remaining slices. In a skillet or griddle, melt one tablespoon of organic butter over medium heat. Place the dipped bread slice onto griddle and cook for 3-4 minutes on each side until golden.

Serve and enjoy. Top with fresh organic fruit if desired.

Instructions

  1. Blend all smoothie ingredients (mango through ice).
  2. Pour into a bowl and top with berries, sliced banana and nectarines, chia seeds, and coconut flakes.

Got the sniffles or are you fighting a cold? Looking to boost your immunity? Get tough on the germs and inflammation with these easy to make turmeric gummies featuring Uncle Matt’s Organic Orange Juice!

Ingredients:

  • ½ cup steamed organic carrots
  • 1 cup Uncle Matt’s Organic orange juice
  • ½ cup hot water
  • ¼ cup quality natural gelatin
  • 2 tablespoons golden paste OR 1.5 tablespoons ground organic turmeric
  • Silicone molds or a coconut oil greased glass dish for pouring your mixture into

Method:

  1. Combine Uncle Matt’s Organic orange juice, carrots and golden paste together until smooth in the blender.
  2. Pour into a small saucepan and quickly whisk the ¼ cup gelatin and a ¼ cup of the orange juice mixture. Follow with the hot water, again whisking quickly. As soon as this mixture is dissolved add the remaining orange juice mixture and whisk until combined.
  3. Continue whisking in the saucepan over low heat until the mixture is very smooth. Just a moment or two.
  4. Pour the liquid into your silicone molds or coconut oil greased glass dish.  Set the tray in the refrigerator, they should set in about 1 hour.
  5. Store in an airtight container. These will keep in the refrigerator for up to to 1 week, or you can freeze them.

Ingredients

1/2 cup organic whole-wheat pastry flour (see Source)
1/4 cup plus 2 tablespoons all-purpose organic flour
1 teaspoon organic sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon freshly grated nutmeg
3/4 cup part-skim ricotta cheese
1 large organic egg
1 large egg white
1/2 cup nonfat buttermilk (see Tip)
1 teaspoon freshly grated lemon zest
1 tablespoon organic lemon juice
2 teaspoons canola oil, divided
3/4 cup fresh organic Uncle Matt’s Florida blueberries

Preparation

Whisk whole-wheat flour, all-purpose flour, sugar, baking powder, baking soda and nutmeg in a small bowl. Whisk ricotta, egg, egg white, buttermilk, lemon zest and juice in a large bowl until smooth. Stir the dry ingredients into the wet ingredients until just combined.
Brush a large nonstick skillet with 1/2 teaspoon oil and place over medium heat until hot. Using a generous 1/4 cup of batter for each pancake, pour the batter for 2 pancakes into the pan, sprinkle blueberries on each pancake and cook until the edges are dry and bubbles begin to form, about 2 minutes. Flip the pancakes and cook until golden brown, about 2 minutes more. Repeat with the remaining oil, batter and berries, adjusting the heat as necessary to prevent burning.

Need a quick and nutritious snack or breakfast recipe? Try Uncle Matt’s Chewy Granola Bar that your kids can quickly grab as an afternoon snack or in the morning as they head out the door.

Ingredients

1/2 cup Uncle Matt’s Organic Orange Juice
2 cups old fashioned organic oats
2 cups puffed organic rice
1/2 cup organic pumpkin seeds
1/4 cup flax seed
1/2 cup chopped organic dates
1/2 cup dried organic cranberries
1/2 cup chopped dried organic apricots
1/4 cup packed organic brown sugar
1/4 cup honey
1 tsp. kosher salt
1/2 tsp. ground ginger
1 organic egg, beaten well

 Directions

1. Heat oven to 350 degrees F.
2. Spray a 13 by 9 inch cake pan lightly with non-stick spray, line the bottom and 2 sides of the pan with parchment paper, creating a sling to make granola easier to remove. Set aside.
3. Spread oats, puffed rice, pumpkin seeds and flax seeds on a baking sheet and toast in oven 10 to 12 minutes or until lightly browned and fragrant. Remove to a large mixing bowl and stir to combine.
4. Decrease oven heat to 325 degrees F.
5. Place Uncle Matt’s Organic Orange Juice, dates, cranberries, apricots, brown sugar, honey, salt, and ginger into a medium saucepan.
6. Set over medium high heat and stir to break up the clumps of dates. Cook just until the sugar dissolves.
7. Remove from the heat, pour over the dry mixture and stir to combine well.
8. Add the beaten egg and stir to combine.
9. Transfer to the prepared cake pan and press evenly into the pan using a rubber spatula.
10. Bake 25 to 30 minutes, until light golden brown.
11. Remove from oven and cool completely before cutting into squares or rectangles.
12. Store in an airtight container for up to 1 week.

Ingredients

2 cups all purpose flour
2/3 cups sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup fresh Uncle Matt’s no-pulp organic orange juice
1/2 cup canola oil
2 tablespoons orange zest from Uncle Matt’s fresh organic orange
2 teaspoons pure vanilla extract
1/4 teaspoon almond extract
1 1/2 cups fresh cranberries, roughly chopped
1 cup pecans or walnuts, roughly chopped (optional)

Preheat oven to 375 F. Lightly grease a muffin tin.

In a large mixing bowl, mix together flour, sugar, baking powder, baking soda and salt. Make a well in the center and add canola oil, orange juice, zest and vanilla. Mix just until all wet ingredients are moistened. About 1/2 way through mixing add the cranberries and nuts.

Fill muffin tins 3/4 full and bake for 23 to 27 minutes, until lightly browned on top and a toothpick or knife inserted through the center comes out clean. When cool enough to handle, transfer to cooling racks to cool completely.
